At dinner, the view is the same, except add a little more romance... fresh flowers, candlelight, and the moon overlooking the mountains. The joy of summer dining in Vermont is the bounty of local products. Vegetables and fruits fresh from the farm, and cheeses from animals who have breathed nothing but our clear Vermont air, and tables ablaze with fresh flowers. Chef Michael Allen uses his foundation in the demanding and rigorous standards of French Cuisine to artfully blend this local cornucopia with fresh meats, fish and game. Flavors from around the world-Italy, American Southwest, Pacific Rim, Northern Europe-are added to create unique dishes which many satisfied patrons have called simply "amazing". Our Deerhill Classics Menu features updated versions of traditional Deerhill favorites, while our Chef Select Menu changes every two to three weeks to allow Michael the luxury of creating seasonally fresh dishes that change as summer progresses.
