CASA DE LAS CHIMENEAS

Food is given serious consideration at Casa de las Chimeneas. From the art of presentation to the preparation of each dish, creativity, balanced by experience, rules. Rather than dishes concocted with a laundry list of exotic ingredients, the culinary staff focuses on what looks and tastes good. Elegance from simplicity. The evening buffet is a balance of dishes, often with the same ethnic 'theme'. Breakfast appeals to all palettes with a hearty continental buffet, a fruit course, our signature fruit frappe drink and a hot main course. Dietary restrictions are no problem, though please give us plenty of notice so we may plan and shop accordingly.

Buffet:
Spinach Crepe Torte served with Composed Greek Salad on Belgium Endive, Homemade Challa Bread, Mexican Chocolate Cake with Kahlua Icing and Fruit Tartlets with Berries.

Susan's marinated moonshine cake is the star of the afternoon snack spreads served on French china in the dining room.

In one of two features on Casa de las Chimeneas that Bon Appétit has done, the magazine describes the inn's food service in mouth-watering detail: "You'll find delicious southwestern-accented breakfast specials, which include blue corn pancakes with fresh berries and maple syrup, French toast made with orange date-nut bread, huevos rancheros, and pears baked in a pastry crust and topped with cinnamon, honey or nuts." In an earlier article entitled Taos: A Little Romance, Bon Appétit writes: "Innkeeper Susan Vernon knows that the skiing visitor has special needs, since she's a skier herself. Check out what she's talking about by checking in for a vacation."

Susan has gained national recognition in the industry, having won national recipe contests. Several years back Stolichnaya Vodka sponsored a ski race and recipe contest for their orange flavored vodka. To prove she was just as capable in the kitchen as she was on the ski race course, she entered both contests. Her dish, Pecan Crusted Chicken with Orange Vodka Sauce won the recipe contest. She placed third in the ski racing portion.
